Sweet and Salty

My friend Trisha shared this
recipe on her blog recently.

Oh YUM!

And Oh SO easy!
Too easy, actually ~
I've made it LOTS!


~ Homemade Kettle Corn ~

1/3 Oil (I use Coconut Oil)
1/2 Cup Sugar (I use Organic, unrefined)
1/2 Cup Popcorn (unpopped)
Sea Salt to taste

Melt oil and sugar in pot
over medium heat on the stove.
Add popcorn.
Cover with a tight fitting lid.
Shake the pot over medium-high
heat until popping slows right down.
You will need oven mitts for this step.
Do not keep on the heat too long
as it will burn...not good!

Immediately pour out onto foil.
Salt to taste.
Allow to cool slightly
and call all your loved ones to share.
It makes a generous amount...
but it doesn't last long.

Man, that looks a lot easier than caramel corn. I LOVE sweet and salty together and I love easy. Thanks for sharing!

Just wanted to give you an update. Today I felt so much better. I got dressed and even did my hair. Felt sort of normal again. I am also starting to discipline again. It is nice because I can't talk above loud at all. It shows me once again that I have been to loud with my children. I need to keep my voice lowered so they have to listen.

God uses all of our trials for His purposes. I thank the Lord, I am on the mend and that I can once again be the wife and mother that I missed being so much.

Oh my, this looks amazing. With all of the baby's food sensitivities there isn't much in the sweet department that I can eat. We actually discovered her sensitivity to soy because of kettle corn that I ate containing soy oil.

I'm definitely going to give this a try! Thanks so much for sharing.

I console myself with the fact that I've cut the sugar in your recipe in half. (I've also started adding a generous dash of cinnamon) That's the only way I can live with myself. :)

I've made this at least twice a week (sometimes more often) since my previous comment. It is so easy and absolutely delicious.
