I was alone for dinner two nights running.
The rest of the family had food sent with them.
They were set.
Me?
My plan was to just
*wing it*.
What to eat?
The answer for one night was....
A twice baked potato ~
stuffed with sour cream,
green onions and cheese.
Oh YUM!
It was good.
I ate. it. all.
What do you eat when
you are cooking for one?

So glad you were able to have a time of peace. I don't remember a time when I have had this in the last years. If I did, I am not sure what I would have, but I would like this for sure!
I don't know if you have read, but Vitaliy is ours!!!!!!!! He came to live with our son's fam about 1 1/2 weeks ago. It has been so sweet to have him in our family!!!

This summer when the tomatoes were in season I would make an avocado tomato salad topped with cheese or sliced tomatoes with sliced mozerella and basil. I also like scrambled eggs with pepper jack cheese, notice the cheese theme going on here. The baked potato you made would also work quite well. Hope your time was productive
I love jacket potatoes! We often have them for lunch, must have cheese and sour cream! I like a little pickle or tangy relish too.
How good of Howie to give you this time to have a blitz. I have been having a big declutter. We have so many books. I've been removing those from the shelves that I don't even open for reference purposes. It's all in boxes and bags and if I had my way I would take it all to the recyclers and charity clothing bins right now! But my husband thinks we should have a garage sale and make some money from what he terms 'good stuff'! I just want my shelves and closets back!
Oh. My. I really don't have any idea what I eat when I'm alone, it has been so long! I suppose a peanut butter and honey sandwich? Left-overs? There would be plenty of left-overs, because I can't cook for one anymore! I do know that if I was alone for several days I would NOT be able to accomplish very much. I would be at loose ends I'm sure. I would take long walks, spend a few hours at the library, and probably hang out at a coffee shop. Best wishes to you in your planning and purging!

What a blessing Camille. My husband allows me time to plan throughout the week…but we are planning a time when I can be at home while he takes the children out somewhere. It is nice to be at home where all my things are to be able to work at my leisure. So glad you have a productive time. It's been a LONG time since I've cooked for one. I think I forgot what that's like!
Oh how nice to have some time alone to do that! I could certainly use that as well! My dinner for one would probablly be a bowl of cheerios and some greek yogurt, lol.
