Lemon Loaf




This past weekend I made this yummy loaf and used the above recipe found in the "Company's Coming ~ Most Loved Treats" cookbook by Jean Pare ~ a Canadian cookbook author! :) I hope you enjoy it as much as we did! FYI ~ I used butter and a fresh lemon and I lined my pan with parchment paper instead of greasing it.

I am not usually a lemon flavored kind of girl, but that looks SO GOOD!!! I keep thinking about digging into it with a fork! Yum.

J ~ It is yummy and not too "lemony"...not a word, but you know what I mean. :) If you poke the entire cake with a skewer before pouring on the glaze it will get into the cake more. I think I will do that next time. This is not one of those "good for you" desserts ~ but it is lovely with a cup of coffee.

Elizabeth ~ Welcome! I hope you enjoy the lemon loaf...it really is yummy! :)

Christa ~ Lemon is one of my favourites too. You could increase the amount of glaze and poke into the loaf just before pouring it on so that it soaks in really well. I'm sure you'll love it! Our winter is going well...thanks for asking! I trust yours is too. :)

Lady Farmer ~ I do hope you enjoy it...if you want it more "lemony" you could do what I suggested to Christa above. :)
