Yummy and Adjustable

Is it hot where you are?  It's rarely hot here.
However, in recent days we've been experiencing 
our version of a heat wave ~ we've hit the 90's!  ;-)
(C'mon, give us a little leeway on this one ~ 
we are not built for heat in these here parts.)

All that to say this ~ dinner that doesn't heat up the
house is imperative on days like these.
This, my friends, fits the bill perfectly.  Absolutely.
A couple of bonus features are that it's yummy and adjustable.
This dinner is quickly put together and fills up all the tummies.

Can't possibly get any better than that, can it?

There is a story behind this meal.  I probably won't get it right.
So, I won't even try.  Suffice it to say, I married into it.
Where exactly my Mum-in-love got the idea, I am not sure.
But, it is a hit and we all love it.

It's not really a recipe ~ more like a method.
Take this.  Chop that.  Throw it on.  That kind of method.
Hope it all makes sense.  Ready?  Here goes.

Chop up some toppings in bite sized chunks.

This is where anything goes.  Anything.
If you already like it, it will work.

I had separate bowls of chopped toppings galore for our feast.

There were bowls full of radishes, zucchini, green onions,
raisins, coconut, pecans, and tomatoes.
Go wild.  Get creative.  The sky is the limit.


Cook up a pot of rice and scramble fry some ground beef.
The beef benefits from some added spice ~
I used garlic powder and sea salt.  Simple, but tasty.

To serve, put a bed of rice on each plate.
Then, a scoop or two of meat goes on top of the rice.
Next, you let your guests build their own meal by adding
the toppings that appeal to them.  It's an individual thing.

Finally, pass the BBQ sauce.  It's the grande finale.
Pour on as much or as little as you like.  We happen to like lots.

Mmmmm!!!

My Sweet Potato Soup:
-in (2 cartons) organic chicken broth boil four large, chopped sweet potatoes
-throw in chopped zucchini, butternut squash, carrots, celery, whatever veggies you have in your fridge you want to get rid of (as long as sweet potatoes are the main ingredient)
-add half an onion and a whole garlic (yes, we love flavor!)
-A LOT of curry! (add as much as you like--we love spicy)
-salt and pepper to taste
-PUREE
-mix in 2 cans of coconut milk

Yields enough for our family of six for three solid days of eating it :)
As most soups, it's better on day two.

I love salads. Greek salad with feta cheese is one option. Another one is quinoa and any kind of vegetables with a balsamic vinaigrette. I cook the quinoa early in the morning before it gets too hot. Then let it cool in the fridge. Add some veges. A recent discovery is freekeh tabouli. both freekeh and quinoa are complete proteins so other proteins required unless you wish to add some.

Dear Angela ~ Ah, yes...quinoa. I like that it is a complete protein...SO good for you! My favourite way to eat it is in a salad. I think I'll have to make some soon. Thanks for the inspiration. :)

Do I dare confess to this :)???
Ice cream ... only when it gets really hot though :). We know how you feel, our whole family melts in heat, especially if it is humid too.
The little less hot and humid days we eat a lot of salad with cold meat on top along with whatever toppings of veggies are around.
You pictures of food are amazing!!

Really glad that you remembered me, Yes, my family and I will be coming to Vancouver in December. If I remember, Calvin was born in 97, right? Why could he graduate 1 year early?

Thanks Camille for the reply. So Calvin is going to college this Fall, I guess. Which school do you intend to choose for him? I have a son here and he's going to the college this year, too. His name is Benjamin and he's the same age like your heavenly oldest son Justin. Wish we could live close so both our sons could go to the same school.
