Fast Food ~ Homemade!

Ever feel like just taking the family out to eat at
a fast food restaurant after a long day?
Does making dinner sometimes feel like an overwhelming
task to tackle?

Don't give in to that feeling!

After all, you have to pack everyone up into the car,
unload them all at the restaurant,
keep them safe while you are there,
load them back up again,
and maybe even give them all
baths them when you return home!

Here are a couple of quick solutions I use.
Would you like to share some of your ideas
in the comments section?
I'm sure we would all benefit from some fresh inspiration for the
"I can't make dinner tonight"
thoughts we sometimes think! :)


How about whipping up a salad with pre-washed organic greens,
half a tin of salmon, any assortment of chopped veggies ~
I especially like to add some sliced avocado ~
and a handful of raisins added in for good measure?
Make this up on individual plates ~
this saves on dishes and ensures that the ingredients are
distributed evenly amongst your guests.
Serve with a roll or slice of bread on the side.
Voila! Dinner is served!


Scambled or fried eggs anyone?
Make it colourful by quartering a tomato on the side.
Serve with steamed veggies and a roll or toast.


We have even had a feast of corn on the cob.
Yum Yum!

Hello Cammille,
Ha, that very temptaion happened to our family tonight. We were on our way to North Carolina for our son's football game when he called and said the coach did not give the travel orders for the team yet.. Umm.. What to do!! Four hungry children and a packed car...
I did not want to stop and go in a restaurant but did not have anything for a meal prepared... Drove through Chic Fil.. Cost us $30.00:{
Next time I am going to make sure I have some whole wheat tortillas, and cheese. Quick Cassadias.. I can always add to them if I have ingredients like left over chicken, rice or black beans, a little salsa and sour cream....

Your salad looks amazing. I do love to buy the organic greens.. Will start adding an avocado...

We love salmon on toast..so easy and serve it with any fresh veggies we have on hand...I love it with any kind of pickles....and tea.

Look forward to see what other ideas are out there.

Breakfast was always (and still is) what I fall back on when I just don't have the energy or inspiration for cooking a dinner. I actually prefer 'breakfast' in the evening ~ my tummy can't handle it in the mornings! To make it seem more 'dinner' like, I serve something I wouldn't take time for on a weekday morning, like waffles, french toast, Dutch Babies or a 'skillet'. I love the skillet ~ some sausage or bacon or ham, onion, peppers, any veggie you want, must have potatoes, when that is all sauted, push it too the side and add eggs to scramble and mix in. Top it all with lots of cheese! Ok ~ I need to make it now! I'm hungry! ;~P

Oh dear Viriginia! You know first-hand how costly it can be to "give in" at those moments! I like your idea of tortillas with cheese, etc...I will have to keep that one in mind. Thank you! :)

Breakfast for dinner is something that's fast that we all like. I also like pasta with pesto (which I keep frozen) as a quick meal.

Oh that salad looks awesome..how do you keep the advacato looking fresh and not turn colors.. Lemon Juice?

Thanks Karen! The "secret" with the avocado is that it was just cut moments before the photo shoot. I put lemon juice into my guacamole and that seems to keep it a nice colour...hope that helps! :)

Haha! I went to the hair salon late this afternoon and received a text from my husband that read, "Going to CFA." (Chick Fil A) I replied, "Pick me up a sandwich!" We give Tim Hawkins and his love for Chick Fil A a run for his money!

But seriously, breakfast for supper is a favorite of ours too. And quick toaster-oven quesadillas are what we fall back on sometimes because we seem to have lots of left-over chicken. I wish I were more creative and added more variety to our menu...it sure doesn't come naturally for me - we like to say my sister got the cooking gene and I got the sewing gene from my mom. ;o)

We don't have Chick Fil A here in Canada Tami...but I'm sure I'd be tempted to use it if we did! :) Those quesadillas sound yummy...what a great idea to use leftover chicken ~ I'll have to give that a try sometime. Thanks for adding in your thoughts here in this "forum".

Breakfast is definitely one of my fall backs. Or I make mini pizzas on leftover slices of homemade bread or english muffins that I have toasted, combine it with a quick salad and I say dinners on!

Waffles, yes! I also find baked potatoes in the microwave, topped with ham, broccoli, cheese, left-over chile, etc. is a great quick meal. I put out whatever toppings I have and let everyone make their own.

Spaghetti is quick too, especially if I have frozen sauce ready to go. When you go to Olive Garden or wherever, and find yourself paying $12 for a plate of pasta, well, eating at home sounds really good.
