Lesley's Gingersnaps



As promised (to a couple of friends) ~
the recipe for Lesley's Gingersnaps!
Be forewarned ~ these go quickly...
But they do freeze well (if you can get them there) ~
I dare you to try! :)


Lesley's Gingersnaps


1 & 1/2 cup softened Butter
1 & 1/2 cup Sugar
2 Eggs
1 cup Fancy Molasses
1 tsp. Vanilla

Cream the above five ingredients together.
Stir together the following ingredients and add to the creamed mixture.

4 cups Flour
2 tsp. Baking Powder
4 tsp. Baking Soda
1 tsp. Salt
1 & 1/4 tsp. Cinnamon
3/4 tsp. Ground Cloves
3/4 tsp. Ground Ginger

Refrigerate dough for a few hours to make it easier to handle.
Form into one inch balls and roll in sugar.


Place on baking sheet and bake at 350* F for about 15 minutes.


The length of baking time will vary according to the size of the cookies.
Cookies will flatten as they bake ~ so be sure to leave room.


This recipe makes over 100 cookies ~
you might like to cut the recipe in half
if you don't want to fight off the temptation to eat and eat and eat! :)

These sound very similar to my Grandmother's recipe for Sugar and Spice cookies. My daughters called them "Man Catchers"! They worked!

Dear Raeann ~ Too funny! I would imagine that they would work for that too, although I never thought of it!! I was already married by the time I got my hands on the recipe ~ Lesley is my sister in law! ;-)

I need big batch recipes for my family these days. Would make them today but don't have molasses in the pantry - can you substitute anything else or leave them out?

Dear Ann ~ I haven't ever tried subbing anything for the molasses...maybe some sort of syrup? I think molasses would be your best bet for the flavour though. Hope you like them! :)

Dear Christa ~ I would love it if you would visit me...anytime! The weather has been quite nice but a little on the chilly side lately. We must be patient...it's still early on! :) How about you??

These look so sumptuous, even though I'm not a big fan of gingersnaps! Maybe we'll have to try this recipe instead. Just might change my preferences!

Today I had a longing to make the oatmeal pancakes again. Isn't that funny? I was just thinking about supper, and the memory of how they tasted popped into my mind. I have to buy some more yogurt or buttermilk, but I definitely will be having them soon.
