Easy Egg Frittata

Michelle posted this recipe in her "Breakfast Challenge"...we love it! We had it for breakfast this morning...so yummy! I don't have a skillet that can go into the oven so after the first stage of cooking I put it into a casserole dish and finished baking in the oven as instructed. One other comment...the spinach is fresh and it is a whole pound that you will need for this recipe! I used 15 eggs today. Hope you enjoy it too!

It is yummy...we are a family of six, but they eat like six MEN!! :) Of course you can adjust to any number of hungry tummies...hope you like it!
